Hi everyone, long time no see. Ohio's winter this year has been kind of a bummer as it hasn't been too cold. It's still going to be a heavy snow suddenly, so I have to be careful. . .

It is a red meat steak filled with umami, made by cutting the misuji (meat on the upper part of the shoulder blade) horizontally into 2 cm thick pieces. Along with the sirloin and fillet, it is a popular cut with a good balance of lean meat and fat, and you can enjoy a rich flavor.
