Doteni (Beef Trimmings Miso Stew) Recipe

Beef trimmings can be surprisingly hard to find in the U.S. At The H Farm, we purchase beef trimmings from a butcher and offer them to our customers. They are not from cattle raised at The H Farm, but you can still enjoy the deliciously tender, collagen-rich texture and deep beef flavor!

I had actually never cooked beef trimmings when I lived in Japan. I started cooking them myself after I began selling beef and customers started asking if I could offer beef trimmings. One of my favorite ways to prepare them is the Nagoya-style dish called Dote-ni.

The first part of this recipe, where you parboil the beef trimmings, can also be used as a starting point for many other dishes, so I definitely recommend checking out the recipe. You don't need a pressure cooker, either—you can simply simmer the trimmings gently in a regular pot until tender!

First, this is what the beef trimmings look like when you open the package.


First, put the beef trimmings in a pot of water and bring them to a boil. Let them boil for a little while, then drain them in a colander.

This is what they look like after draining. Rinse the trimmings well with water, then cut them into bite-sized pieces.

Next, cook them in a pressure cooker for about 30 minutes, then let the pressure release naturally. (If you're using a regular pot, simply simmer them gently until tender.)

After cooking, I like to let them cool and then refrigerate them. This allows the fat to solidify, making it much easier to remove. It is even easier if you let them chill in the refrigerator. This is what they look like at that point:


Now, remove the solidified fat and season the trimmings.

And it doesn't have to become Dote-ni! From this point, you can season them however you'd like and use them for stew, curry, or any other slow-cooked dish.
