The outer part of the thigh, sometimes called "Nakaniku". It is the part that comes from the rump and hind legs. The muscles in this area are used for movement, so the beef is leaner and less tender. Because it has a moderate amount of fat, red meat's flavor is outstanding. We also recommend slicing it into thin slices or strips for stir-fry, or cutting it into cubes and stewing it.
